Chile Verde Pork Stew

Ingredients:

2 lbs boneless pork shoulder, cut into 1-inch cubes

1 tablespoon olive oil

1 large onion, chopped

4 cloves garlic, minced

1 1/2 lbs tomatillos, husked and rinsed

2 poblano peppers, roasted, peeled, and seeded

2 jalapeños, seeded (optional for milder heat)

1 bunch fresh cilantro, roughly chopped

1 teaspoon ground cumin

1/2 teaspoon dried oregano

2 cups chicken broth

Salt and pepper to taste

Fresh lime wedges, for serving
